Couching Potato, Hidden Dragon...




There's this something which I loved alot as a kid and I finally found the recipe from my neighbour. It turned out that she likes this dish too! Wow. It's a small world. But.. the story is true.

I love potato croquettes. Nothing beats deep-fried carbohydrates. haha!!

This is a very simple recipe which everyone can make. Let's do it!

Ingredients:
  1. 2 to 3 potatoes
  2. pepper and salt to taste
  3. 1 tablespoon butter
  4. 1 tablespoon full cream fresh milk
  5. 50 to 80 gms of cooked ham or cooked seafood like fish, crab or prawns (cut into small pieces)
  6. 2 tablespoons of plain flour
  7. breadcrumbs to coat
  8. 1 egg beaten

Simply, boil the potatoes in some water for 10 to 15 minutes (tip: if you make soup and accidentally add too much salt, you can drop in a potato and it will help absorb the salt). Remove the potatoes, drain them and mash your soft potato chucks while still hot. Add in the butter, pepper, salt and milk. Mix well and add in your ham or seafood (if you ham is salty, you do not need to add salt).

Divide the mixture into small equal portions and shape into 2 inch long rolls. Flour the palm of your hands and pat each roll in the beaten egg. Then roll in the breadcrumbs and deep fry in hot oil till golden brown. Drain on a paper towel to remove the excess oil and eat while still hot.

Serve with a little bit of mayonnaise. hehe. Well, if you're afraid of getting fat, all you need to do is...
